
Vegetable Broth
This is super easy way to use your old vegetables to create a healthy broth.

Ingredients
- 4 C raw or cooked vegetables Anything leftover
- 12 C water
- 1 tbsp Italian seasoning
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp red pepper flakes
- 2 bay leaves
- 1 tsp black pepper
- desired salt
Instructions
- Fill a stock pot with water and vegetables.
- Add all remaining ingredients.
- Simmer for 2-3 hours
- Strain
Notes
Tip 1
You can use any leftover raw vegetables to make this broth. Some of my favorites are onions, tomatoes, peppers, celery, garlic, carrots and leeks. I typically save all the tops of vegetables when I am preparing meals. I store them in a container in the refrigerator. On the day of broth making, I gather any vegetables and fresh spices that are about to expire to add to the pot.
Tip 2
Feel free to use the skins of any allium family of vegetables. They will add color to the broth.
Tip 3
You can throw all the vegetables and spices in a crock pot and cook on high for 6-8 hours.
